Last night was "Cooking At Home" night with DB. Since I bought Vegetarian Cooking For Everyone cookbook, we've been trying to make Saturday nights home cooking night with at least one recipe from this book. Two weeks ago I made Chickpeas with Pasta. It turned out to be a big success! Forgot to take pictures of that meal, but I remembered for last night.

My sis called me as I was preparing the meal. She said that she wanted someone to cook for her. Well since she couldn't be here to eat it, I thought I would share what it looked like.

On the menu was...
  • Tomatoes Stuffed with couscous, roasted pine nuts (roasted them myself), garlic, Parmesan and herbs. [Recipe from cookbook]
  • Sauteed Zucchini/Carrots with onions and garlic.
  • Baked Sweet Potato Fries.
  • It was all washed down with Yellow Tail Merlot.
To top it all off everything made was organic. Yum!!!!
